PRE-COOKING Cook the pasta in plenty of salted water, always keeping the pot on the boil for the exact cooking time indicated.

Drain the pasta and spread out in an oven dish, adding vegetable oil. Put into a blast chiller and keep in the fridge (0 - 4°C) for at least an hour and no more than 24 hours, then finish and serve.

FINISHING finishing in boiling water for 40-60 seconds.
